Executive Pastry Chef

The Otesaga Resort Hotel - a Historic Hotel of America in Cooperstown is one of New York State’s most distinctive resorts. Built in 1909, the Otesaga is a Modified American Plan resort. Dining options include the Main Dining Room serving fine American and International cuisine for up to 250 guests and the Hawkeye Bar & Grille with American cuisine or the Pro Shop overlooking Lake Otsego.  The Hotel features a spacious $5 million newly renovated kitchen. 

 

We seek an experienced Executive Pastry Chef with excellent creative skills to execute eye-catching and delicious desserts and display pieces for our elegant and historic, Four-Diamond resort hotel located in upstate New York.  A culinary school graduate is preferred with a minimum of five years of progressive pastry experience including at least 2 years in a leadership position at either a similar sized resort or luxury property.

 

This is a full-time position with excellent benefits and salary commensurate with candidate’s experience.  This exciting position requires the individual to effectively supervise, train and guide the team in the kitchen brigade. You Must be Hands-On Chef and able to balance the management side. Responsibilities will include development of new pastry items, ensuring quality preparation and presentation of items in the Resort’s Main Dining Room, American Regional restaurant and banquet areas.  Expertise in all aspects of contemporary plated desserts and sugar and chocolate experience is preferred. This position is also responsible for the proper handling and storage of all food items in accordance with all sanitation and health regulations. The Executive Pastry Chef reports directly to the Executive Chef.

We seek an experienced Chef de Cuisine with excellent interpersonal skills to execute menu plans and supervise culinary staff for this elegant American Plan historic, Four-Diamond resort hotel located in upstate New York.  A culinary school graduate is preferred with a minimum of three years Chef Tournant experience with the emphasis being in Garde Manger. 

 

This is a full-time position with excellent benefits and salary commensurate with candidate’s experience.  Rotational responsibilities will include insuring quality preparation and presentation of all menu items in the Resort’s Main Dining Room, American Regional restaurant and banquet areas.  This position is also responsible for the proper handling and storage of all food items in accordance with all sanitation and health regulations.    The Chef de Cuisine reports directly to the Executive Chef.
