Property Requirements |

1. Must be Nationally and Internationally Recognized
(Conde Nest, Zagat, Etc.) |

2. Major Food and Beverage Operation |

3. Must be recognized as 4 Star or 4 Diamond |

4. Supports and encourage exchange of staff
seasonally. |

| |
5. Involvement with local ACF events. |
|
| |
6. ACF approved apprenticeship and/or culinary
externship site. |

Chef
Requirements |
|
| |
1. Must be in the culinary profession for not less
than ten years. |
|
| |
2. Must be certified chef understanding that
Certified Executive Chef and American Academy of
Chef membership is encouraged. |
|
| |
3. Must be a member in good standing of the American
Culinary Federation and remain so to hold RFEC
membership. |
|
| |
4. Must be active in local ACF chapter holding an
office, volunteering or consistent attendance. |
|
| |
5. Training and graduating and ACF apprentice or
culinary extern. |
|
| |
6. The actual lead chef for any of the following
examples: Chaine des Rotisseurs dinner, local or
regional ACF Chapter dinner, Les Amis de Escoffier
dinner, or any other nationally recognized
association. |
